What is Marshmallow?

Marshmallow, also known as althaea officinalis, is a perennial plant native to Europe, North Africa and Western Asia. It is traditionally used for medicinal purposes, as well as to produce the marshmallow we know today. Marshmallow is also the name of a soft, sweet confection originally made from the root of the marshmallow plant.

Traditional marshmallows were made by mixing the marshmallow root with sugar and water, then beating the mixture to create a soft texture. Today, most commercial marshmallows are made from gelatin, sugar, corn syrup and other ingredients, rather than marshmallow root.

Recipe For Homemade Marshmallows

Here's the traditional recipe for making marshmallows from the root of the marshmallow plant. This method is more complex, but it offers an authentic experience!

Ingredients:

  • 1/4 cup dried marshmallow root, cut into small pieces
  • 2 cups cold water
  • 2 tablespoons powdered gelatin
  • 2 cups granulated sugar
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • Coating: icing sugar and cornstarch mixed together (about 1/2 cup each)

 

Instructions:

  1. In a saucepan, combine the marshmallow root and the 2 cups of cold water. Leave to infuse for at least 4 hours, or ideally overnight.
  2. Once the infusion is complete, strain the liquid to remove the pieces of marshmallow root. You can use a fine sieve or strainer.
  3. Pour 1/2 cup of the infusion liquid into a small bowl and sprinkle the gelatin over the top. Leave the gelatin to dissolve in the liquid for a few minutes.
  4. While the gelatine is dissolving, combine the granulated sugar, remaining infusion liquid, water and salt in a saucepan. Heat the mixture over medium-high heat, stirring constantly, until it reaches a temperature of 115°C (240°F) on a candy thermometer.
  5. Remove the sugar mixture from the heat as soon as it reaches the desired temperature.
  6. Slowly add the dissolved gelatine mixture to the marshmallow liquid, whisking constantly.
  7. Increase the speed of your mixer to maximum and continue beating for about 10-15 minutes, or until the mixture becomes thick, glossy and increases in volume.
  8. Add the vanilla extract if you wish and mix briefly.
  9. Pour the marshmallow mixture into a tin lined with baking parchment and sprinkled with the icing sugar and cornstarch mixture.
  10. Leave the marshmallow to set for at least 4 hours, preferably overnight.
  11. Once the marshmallow has hardened, turn it out onto a surface sprinkled with more icing sugar and cornstarch. Cut into squares or shapes of your choice.
  12. Roll each piece of marshmallow in the icing sugar-cornstarch mixture to coat well.


Your homemade marshmallow dough, made from marshmallow root, is ready to enjoy! You can store them in an airtight container to keep them fresh.
